It’s very hard not to eat your subject when it smells so good.
In the mood for some Fall scents I got up early and baked a cheater’s pumpkin cake this morning. I had to get up early because it’s supposed to get up into the mid 90’s today and I didn’t want to be baking when it was so hot. Temps like that kind of ruin the whole Fall ambiance I am going for here.
I don’t know what it is about Fall that just appeals to me so. If you were to ask me what I my favorite season is I would, without hesitation, say Spring. But I love the anticipation of Fall so much. The waiting for leaves to turn, the air to get crisper and cooler. The cinnamony, nutmegginess of it all.
There is a house down the road that has a big old pumpkin growing right by the roadside. It makes me smile every time I pass by it. And the fact it has remained unmolested by squirrels and marauding children is pretty amazing. I should have more faith in man- and squirrel-kind ~ they probably appreciate the simple joy of it too.
Cheater’s Pumpkin Cake
1 box spice cake mix
3 eggs
1/3 cup vegetable oil
1 1/4 cup canned pumpkin
Pre-heat oven to 350 degrees farenheit. Grease and flour a bundt pan (I love that baker’s spray – kind of like Pam but with built in flour). Mix all indredients together with an electric mixer for two minutes and then pour into prepared pan. Bake for 40-45 minutes.
Sprinkle with powder sugar or make a simple vanilla glaze to pour over top.

I like so much Autumn. I want it so much every year and when it arrives, I feel such a relief because the summer went away already. This year there’s just a few signs of the coming season: some leaves on the floor, the floewrs of ivy…
But it’s still hot.

I made this last night. My hubby and I had some and took half the cake to share with my fellow teachers (just my podmates) and it was a hit! I had to send them the recipe right away because they loved it so. THANK YOU!!! Here in Arizona, it’s hard to get into that fall feeling due to 100+ degree temps but this was a great start!!!
