On our five acres we have about 4.99 acres of blackberry bushes. They have quite simply taken over. When we leave the house we have to take a machete with us just to hack our way to the car.

So what to do with all those blackberries? I’m all for leaving them to the birds and squirrels to eat because those suckers have thorns and I’m pretty sure coyotes or tigers live in them but Rick was brave and picked a colander full.
And I made a cobbler. I used The Pioneer Woman’s recipe and it turned out okay. I think it needs a thickening agent of some kind. The juice was just a little bit thin. I also added about 1/8 cup of cinnamon sugar to the biscuit part only because it was sitting on the counter, left over from Snickerdoodle baking earlier in the day.
There’s nothing like 109 degree temperatures to bring out the baker in me. I think the cinnamon added a really nice flavor to it but you still need to add a nice scoop of vanilla ice cream.
Since we are out looking for my Honda has anyone seen my stone garden bench?

I don’t know how you guys stand the heat out there. It was hot in NH last week-90’s-but hubby and I were in Maine with a gorious sea breeze. Loved it!

Hot days are a bit thin on the ground over here. I love blackberries (they’re often called brambles in my part of the world)and that cobbler looks absolutely delish!

I think you’re lucky to have all those blackberry bushes. You could freeze blackberries and have them all winter.

You just brought back some fun memories. When I was a kid I lived with my grandparents in MO for a couple of years and every summer we would go pick wild blackberries that grew along the ditches. Grandma would make blackberry pies. My sister and I would play more than pick but we had a great time. Thanks for all the memories.

The blackberry cobbler looks yummy.
I wish we could get blackberries here for less than 1.99 a pint! Just think how much that bowl of berries is worth.
We make cobbler out of strawberries and rhubarb or apples and what ever other fruit is seasonal. The top is often flour, rolled oats, brown sugar, butter and cinnamon. You can add a bit of flour to the fruit for thickening or a bit of cornstarch. Sometimes if I make the cobbler in a deep dish, I put a layer of topping in the middle with a layer of fruit above and below. Then I top it with the topping. You are right about it being wonderful with a scoop of ice cream, especially if you serve the cobbler warm.
You are making me hungry for cobbler! Yum!

Ooh I love blackberries, though they dont ripen here til September. However I they freeze very well, theres nothing like eating berries out of season, actually I still have some from last year.

My blackberries (on the border between my neighbor and myself) are getting ripe. I’m so in love with the taste of them. Every so often I think “I must get rid of those prickly, sticky things….and then comes late summer….and yum!
