Gluten Free Breakfast Muffin

As mentioned last week I've started eating low carb (or Ketogenic) which rules out all my most favorite breakfast options.  Namely being toast or more toast.  I tried doing the egg thing but oh my god can you get sick of eggs quickly.  Being desperate I turned to my go to place for inspiration and guidance:  Pinterest.  I did a search on Keto breakfast and amongst the eight million ways to eat bacon (not a bacon eater here) I found a few mug muffin recipes.  

A mug muffin is just that – a muffin you cook in a mug using a microwave.  Never having great luck with microwaved baked anything I was doubtful but figured I had nothing to lose.  Except about $40 in nut flours.  Goodness they are expensive.

I tweaked and fiddled and finally came up with two versions that I absolutely love.  I would take either of these over toast any day.

The base recipe is the same for both with one having coconut flour and the other having ground flax seed.  The coconut flour one is a little drier and more muffin-like in texture.   The flax seed one is a little eggier tasting and while still muffin-like, not quite as much as the coconut one.  Coconut flour is very absorbent which results in a better texture but the flax seed one has a lovely nutty taste that I prefer.  The flax seed one puffs up more, almost souffle like, but like a souffle, deflates a bit when removed from the mug.  Speaking of mug – I actually make mine in a 5 oz. ramekin.  Ramekin muffin just doesn't have the same ring to it.

Slight segue but aren't these containers lovely?  I follow the Home Edit girls' Instagram and was inspired to reorganize my cupboards.  The containers are the pop containers by Oxo and you can find them at Bed Bath and Beyond, Crate and Barrel or the Container Store.

Since I'm usually in a bit of a rush in the morning I wanted to minimize the amount of time it takes to make the muffins.  The tedious part is measuring out all the dry ingredients so once a week I make up a week's worth in small containers.  Then I just have to mix it in with the wet ingredients.

Mug Muffin

  • 1 tbsp. butter
  • 1 tbsp. erythritol (sugar substitute)
  • 1 egg
  • 1 tbsp. coconut flour OR 1 tbsp. finely ground flax seed
  • 2 tbsp. almond flour 
  • 1/4 tsp. baking powder
  • 1/4 tsp. cinnamon or pumpkin pie spice
  • Pinch of salt
  • 1/2 tsp. vanilla
  • 1/2 tsp. cream or milk

In a mug or ramekin melt the butter in the microwave for 30 seconds.  Add the dry ingredients then the egg, vanilla and cream.  Mix well with a fork. Cook in microwave for 90 seconds for the coconut version or 100 seconds for the flax seed version. Use care when removing the mug or ramekin from the microwave as it might be hot. 

Notes:

You can be as creative as you like with the flavoring.  I like the vanilla/pumpkin spice combination but I will occasionally use almond extract in place of the vanilla.  Just cut it back to a scant 1/4 tsp.  

Vanilla – I buy my vanilla from Costco in a jumbo bottle.  It's a good value but the vanilla isn't as great as say Penzey's or Nielsen-Massey so I add a vanilla bean to the bottle and it improves the flavor quite measurably.  

For the sugar substitute I use Swerve granular.  It measures up the same as sugar and is made of erythritol which is a natural ingredient.  You could always just use sugar if you don't care about the carbs and are just looking for a gluten free muffin.  Some people notice a slight cooling effect when eating erythritol but I don't really notice it.  If you have pets be super duper careful with your sugar substitutes.  Erythritol is okay but DO NOT let them eat anything with xylitol in it.  It is extremely toxic to cats and dogs.  

I use an extra large egg for this recipe.  If you can use jumbo or large eggs if you want it more or less eggy.  

I buy shelf stable whipping cream from Trader Joe's.  It's a great product and nice small sized container.  I usually stock up and since it is shelf stable you can store it in your cupboard for up to six months.  It doesn't whip up quite as nice as regular whipping cream but it is great as an ingredient for soups and sauces.

The flax seed version is lower in carbs than the coconut version.  I hesitate to give out nutritional information because you never know if those dietary database are completely accurate but when I plug it into MyFitnessPal it calculates the carbs in the flax seed version to be six and the coconut one is eight.  

These muffins are best eaten right away (as is any baked good) but if you do want to save it for later just give it 15 seconds or so in the microwave to warm it up.

Alt Thanksgiving Table

One of my favorite things about Thanksgiving is setting a pretty table.  I have never been into the typical autumnal colors for decorating.  I'm just not a golds, reds and brown kind of girl.  The tricky thing is my normal go to shades for decorating, particularly table decor, can look very Christmasy.  I'm very much into whites, silver and crystal. 

I wanted to create something that was warm and festive and not too formal.

To bring in a Thanksgiving vibe I brought in elements that seem Fallish to me – a mercury glass pumpkin, some deer busts, and warm silver accents.  The faded floral plates and turquoise tumblers keep if from looking too Christmasy and yet I feel like I'm staying true to my style.

The table runner also helps to warm it up a bit.  I threw that together in about 15 minutes.  I just took a piece of scrap linen, cut it to the size I wanted and glued some lace on the two long edges.

I love the deer busts.  I got them at Michael's last year (and shhhh…technically they are Christmas decorations).  The turquoise tumblers are from the Pioneer Woman's line of glassware.   The dinner plates are the Johnson Bros. Rose Chintz pattern that we collected from a few antique shops but it is a pattern that is easy to find.  The smaller glasses are vintage Anchor Hocking Wexford (also easy to find).  I rarely use them to drink out of.  Normally I use them for votive candles.  So so pretty.

This is my non-traditional take on the Thanksgiving table.  

I really do want to just slow down and savor Fall for just a little bit longer before I have to get into full on Christmas panic mode.

We had to turn our heat on this week.  First time this season.  We also swapped out our bedding for something cozier and warmer.  It sure makes it hard to pull yourself from bed in the morning when it is so comfy and warm.  

I'm relishing my quiet November weekends.  You know, before the mad rush of the C-word starts up in earnest.  There is something just so relaxing and restorative with letting the days unfold as they please with nothing taxing or strenuous on the agenda.  I think we might go to an architectural salvage yard to look for an interesting old door for our pantry but other than that we have no plans.   

The only other thing planned is to head over to my Dad's tonight and make dinner for him and my sister Mary who is visiting for a month and make her a birthday dinner!  Happy Birthday Mary!  I love you!  Hope you like Chicken Milanese…..

A bonus post!  With not great pictures!  Clearly a food photographer I am not.  I switched up my posting schedule this week because I wanted to share a food/diet related post.  

Back in May (May 22nd, to be exact) I decided that I was tired of feeling fat and sluggish all the time.  I tend not to ease into things when I want or need a change.  Like when I gave up Diet Coke which is, honestly, harder than crack cocaine to give up (I'm guessing….).  I just quit my six-pack a day habit cold turkey.  Well in May I decided to quit my bread habit.  

I went Keto.  This isn't going to be a how to post on the ketogenic way of eating but I wanted to give some background on how I lost 40 lbs.  Keto, for anyone that doesn't know, is essentially a low carb, high fat diet.  It's reminiscent of the Atkins diet but with more restraint – no eating bacon and steak all the live long day.  I keep my carbs under 20 grams a day and my fat and protein intake almost equal (81 grams of protein and 101 grams of fat is my daily goal).  I get my fats from avocados and avocado oil mostly with the occasional pat of butter thrown in when cooking.  Some would say my fat to protein ratio isn't high enough but since I have fat to lose I want to get the rest from my ample stores.  So far it is working for me and I have been steadily losing weight at a healthy rate.  

Anyway – blah blah blah…bottom line is I found this way of eating incredibly easy to adapt to.  I may have had a week or two at the beginning where my body was a bit mystified that it wasn't getting two slices of buttered cinnamon toast every morning but other than that I haven't felt deprived.  I also find it very easy to eat out – just order a salad with some grilled chicken and you are good to go.

So on to the recipe – I call this a deconstructed egg roll.  There are a number of versions out there generally referred to as Crack Slaw (two references to crack in one post – I'm going to attract a different kind of demographic here) and this is my take on it.  I don't eat pork, which is the standard protein in this dish, so my version is made with ground chicken or ground turkey.

This is seriously good whether you are eating low carb or not.  Rick loves it as much as I do.  It is a great weeknight meal because it doesn't take very long to throw it together.  We have it at least once a week.

Deconstructed Egg Roll

  • 2 tbsp sesame oil
  • 1/2 cup diced onion
  • 1 lb ground chicken or turkey
  • 1/2 tsp garlic powder (or two cloves fresh garlic, minced)
  • 2 tbsp minced ginger (or 1/2 tsp. ground ginger)
  • 1 tbsp garlic chili sauce 
  • 1 14 oz. bag coleslaw
  • 3 tbsp tamari or soy sauce
  • 1 tbsp rice wine vinegar
  • 1/2 cup chicken broth
  • 2 tbsp sesame seeds, toasted
  • 2 green onions, sliced (white and green parts)
  • Salt and pepper to taste

In a large skillet heat sesame oil over medium-high heat and cook the diced onion until translucent. 

If using fresh garlic, add to pan and cook for another minute or two. 

Push to the outside and add ground chicken or turkey, garlic chili sauce, ginger and dried garlic powder, if you are using it instead of fresh, to pan and cook until chicken or turkey is cooked through. 

Add coleslaw, tamari (or soy sauce), rice wine vinegar and chicken broth and saute until coleslaw is tender.  Add salt and pepper to taste.  I like to wait until I've added all the other ingredients since the tamari (or soy sauce) and chicken broth are both salty and I don't want to over do it.

Garnish with sliced green onions and toasted sesame seeds.  

You can add fried wonton strips (found with croutons at the store) for anyone that is not worried about the carbs.  

One last tip before I end this post – I found lightly dried ginger in the produce section of our grocery store and it is fabulous.  All the flavor of fresh but without the hassle of mincing it.  I use 1 tbsp. of the lightly dried in place of 2 tbsp. of fresh ginger.

November’s due

Coffee Table1

I plan on keeping this blog Christmas free until after Thanksgiving.  Just so you know…

I spent Saturday putting away the Halloween decorations and I wanted to Autumn things up a bit so I styled the coffee table. The candle certainly helps with the ambiance.  It is the Rosy Rings Pumpkin Farmhouse I mentioned a while back.  You don’t even have to light the thing.  It smells heavenly all the time.  It’s not too baked goods scented, if you know what I mean.  Just a nice fall scent.

Whoops – can you spot the Halloween decoration I forgot?    

In other decorating news we finally had our two plaid bergère chairs reupholstered.  They are really nice chairs and the plaid worked nicely in our last house but not so much in this one.  Not to mentioned they had faded terribly.  We went with a pale grey/taupe linen looking fabric.  Such an improvement.  I kind of wish the wood was whitewashed a bit but I can live with it the way it is.

I also added some globes to the top of the armoire.  It was crying out for something up there but there is just a shade over a foot of space between it and the ceiling.  I was at Cost Plus (which they insist on calling World Market but it will always be a patchouli scented Cost Plus to me) and I found these globes.  This picture doesn’t do the green one justice.  Some of the countries are mercury glass.  So pretty.  I kind of wish the stand was weathered brass like the others.  If it bothers me enough I’ll just paint it.  

It’s nice to change things up now and then.  I feel like I can get into a decorating rut.  What I really need to do is pull out ALL of my decorative objets, take inventory and organize it all properly.  I have stuff spread out from my office, to the garage and out in the shed.  That’s a project for another day.

  • I plan on fully embracing the rest of Autumn and not rush too quickly into Christmas.  Thanksgiving is such a lovely holiday.  It's hasn't been over commercialized or hyped up like Christmas.  For me, Thanksgiving is just a day to relax and really enjoy your loved ones.  In addition to the great food I love being in charge of the tablescape.  Isn't this Thanksgiving table just lovely?  I absolutely love the collection of turkey plates.  The rest of the table is perfection in its simplicity.  I'm so on that.
  • I have this Staub Cast Iron Pumpkin and aside from being a great cookware piece it is a great addition to your Autumn table.  If you aren't into the orange, rustic colors it also comes in white.  Which I am seriously lusting over now….
  • Look at this adorable AirBnB in Portland, Oregon.  One of my favorite nieces lives in Portland and I'm thinking I just might need to go visit her.  
  • I am so looking forward to this Daniel Day Lewis movie:  Phantom Thread.  I do love a DDL movie.  

We have just been having the perfect Autumn weather – oh sure it was a bit hot earlier in the week but now it is time to pull out the sweaters and all the soup recipes and just hunker in.  We have a no plans kind of weekend but we might head up to the Napa area to offer our support and patronage.  My friend went up there last weekend and said the wineries and restaurants are just so thankful for any kind of business. There is no sign of any smoke or damage – just establishments hoping people will come back.
