I'm sure many of you know and follow Fifi O'Neill, known for her gorgeous photo styling and her romantic, prairie aesthetic.  She is also a devout animal lover and supporter and is very passionate about animal rescue. 

She has just published a book titled Rescue Me – Love stories of Humans and the Animals they saved.  All proceeds from the sale of the book go to animal shelters and rescue groups.

And would you look at that!  Rosie made the cover!  That is her in the upper right hand corner.

Fifi had posted on Instagram that she was looking for stories for her book so I emailed her with the story of how we rescued two sweet, shy ragdoll sisters and I included a couple of pictures and their story is included in the book.  

It is quite an honor to be included in such a worthwhile cause.  

The girls?  They aren't letting it go to their heads.  Sweet and humble as always.

Pumpkin Macarons

Last week I was on a mission to create the perfect macaron.  I haven't succeeded yet but I'm getting closer.  This is my second attempt.

The first attempt was not pretty.

The issue here was I didn't get my egg whites to the appropriate stiff peak stage.  The "feet" didn't develop properly and half of them cracked.

I followed the macaron recipe on the Tasty website with the addition pumpkin pie spice for flavor and for the second batch I added cream of tartar to help with my egg white whipping.  I think this was a mistake as I can definitely taste the cream of tartar.  But it did make my macarons look perfect.

Okay let's get down to the lessons I learned.  

Number 1:  Throw all your dry ingredients into a food processor and pulse them thoroughly.  Then sift them through a sieve to make sure they are really fine.  

Number 2:  Powdered sugar is volatile.

Photo doesn't accurately convey how much powdered sugar ended up all over the rug and floor.  

Number 3:  Make sure your egg whites are at room temperature before mixing.

Number 4:  Use more food coloring than you think you will.  The baking process leaches out the color.  My batter for my second attempt was rather garish looking but the end result was the warm, pumpkin-y color I was going for. 

Number 5:  Make yourself a template.  I was rather cocky for my first attempt and tried to free hand it.  I had quite the assortment of sizes.  I just plopped a bunch of 1 1/2" circles into MS Word and printed off two copies.  I put them on my cookie sheet under the parchment and I ended up with almost perfectly consistent macarons.  Just slip the paper out before baking.

Number six:  Really bang the heck out of your pans after you have piped your macarons.  Every recipe and video said to do this to make sure any air bubbles pop.  I did but maybe not enough as some of them had bubble come to the surface during baking that resulted in lumpier looking tops.

Number seven:  Let your macarons rest on the counter for an hour before baking.  I think this also helps with the proper development of feet.  You want the batter to dry out and develop a skin before baking.

Number eight:  Don't over bake your macarons.  Every recipe said to make sure they released easily from the parchment paper before removing from oven otherwise they would be under baked.  I baked for the requisite 20 minutes and then checked and they were really sticking.  So I left them if another three minutes.  Same thing.  Three minutes later they weren't any better.  Finally after the third time I just took them out and after I let them sit for a few minutes they came right off.  I think they would have done that at 20 minutes and I would have had perfect macarons.  

Mine look lovely but the cookie is very crisp and doesn't have that chewy texture it should.  I think it was more an issue with my off brand parchment paper.

I made pumpkin butter cream for the filling.  My son had made a batch of pumpkin butter and I wanted to incorporate it into the recipe.  

On to the recipe!  

Pumpkin Macarons (adapted from tasty.co)

  • 1 ¾ cups powdered sugar
  • 1 cup almond flour, finely ground
  • 1 teaspoon salt, divided
  • 3 egg whites, at room temperature
  • ¼ cup granulated sugar
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • Orange gel food coloring

Buttercream

  • ½ cup unsalted butter, at room temperature
  • 1 3/4 cups powdered sugar
  • 1/4 cup pumpkin butter (or puree)
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Make the macarons:

  1. In the bowl of a food processor, combine the powdered sugar, almond flour, ½ teaspoon of salt, ½ teaspoon of pumpkin pie spice and process on low speed, until extra fine. Sift the almond flour mixture through a fine-mesh sieve into a large bowl.
  2. In a separate large bowl, beat the egg whites and the remaining ½ teaspoon of salt with an electric hand mixer until soft peaks form. Gradually add the granulated sugar until fully incorporated. Continue to beat until stiff peaks form (you should be able to turn the bowl upside down without anything falling out).
  3. Add the vanilla and beat until incorporated. Add the food coloring and beat until just combined.
  4. Add about ⅓ of the sifted almond flour mixture at a time to the beaten egg whites and use a spatula to gently fold until combined. After the last addition of almond flour, continue to fold slowly until the batter falls into ribbons and you can make a figure 8 while holding the spatula up.
  5. Transfer the macaron batter into a piping bag fitted with a round tip.
  6. Pipe the macarons onto the parchment paper in 1½-inch (3-cm) circles, spacing at least 1-inch (2-cm) apart.
  7. Tap the baking sheet on a flat surface 5 times to release any air bubbles.
  8. Let the macarons sit at room temperature for 30 minutes to 1 hour, until dry to the touch.
  9. Preheat the oven to 300˚F (150˚C).
  10. Bake the macarons for 20 minutes, until the feet are well-risen and the macarons don’t stick to the parchment paper.
  11. Transfer the macarons to a wire rack to cool completely before filling.

Make the buttercream:

  1. In a large bowl, add the butter and beat with a mixer for 1 minute until light and fluffy. Sift in the powdered sugar and beat until fully incorporated. Add the vanilla, pumpkin butter, and ½ teaspoon of pumpkin spice and beat to combine.
  2. Transfer the buttercream to a piping bag fitted with a round tip.
  3. Add a dollop of buttercream to one macaron shell. Top it with another macaron shell to create a sandwich. Repeat with remaining macaron shells and buttercream.
  4. Place in an airtight container for 24 hours to “bloom”.

Enjoy! 

I still need a third go at these to see if I can get the cookie part right.  At least they are good enough to photograph and I am hoping after they rest (bloom) for a while the consistency will be good.

All Hallows’ Eve

Happy Halloween!  Here is the group shot from our 31st Annual Halloween Party.  It really is ridiculously fun and the costumes are so clever.

I was Miss Havisham from Great Expectations.  I feel compelled to mention that I used makeup to try to look older and more haggard.

I won the prize for "Most Effort."  I bought a wedding dress at a thrift shop and cut the too current looking top off of it.  I just folded over the cut edge of the skirt part to fashion a waistband.  I found tulle the color of dirty cobwebs and attached layers of it around the waist.  I had a victorian looking blouse that I wore along with a sheer white robe and cinched it all in with a belt I made of satin ribbon and grey lace.   The veil was made from the same dirty looking tulle and grey ribbon.  

I've had this costume idea for a few years now.  Next year I'm going as something completely simple.

There is Grandpa Rick and his little skeleton granddaughter Gwen.  The pretty peacock in the middle is our daughter in law Trisha.  Gwen is wearing her auxiliary costume.  Her real costume was a cave girl riding a dinosaur.  Boy is that going to confuse her when she starts learning about the Mesozoic era in school.

The quality of the pictures are poor because, except for the group shot, they were taken with cellphones.  Next year I'm going to have to remember to use my camera more.  It's just hard to remember during all the festivities.  

My blog schedule has been a bit off the past couple of weeks. I hope to get back to my regular three days a week schedule next week.  Now that Halloween is over what shall we talk about?  Haha!  I do promise no Christmas posts until after Thanksgiving.

  • Look at this lovely and super affordable white pumpkin casserole dish (Staub vibes anyone?).  And the mini versions!  And in green!!!  Be still my heart
  • I love this list for brain dumping all those ideas you have pin-balling around in your brain
  • My first thought with sharing this home tour of a former brothel was more on how you can/or cannot eradicate the history or vibe of a place with mere decorating or a coat of white paint.  But the comments are so thought provoking I think they are what I really wanted to be shared here
  • Does anyone else miss Smith and Hawkins as much as I do?  I loved going into their stores – especially for the fabulous selection of gardening tools and great books.   They have maintained a presence at Target and here are a few lovely things they are carrying (warning:  brass heavy…) Votive candle dish.  So simple and so inexpensive!  How pretty would that be on a coffee table?  70's vibe plant mister.  I think I want the full brass one (from my youth) but this is a pretty alternative.  Interesting flower frog.  Even the description is a little vague as to what it is (wall hanging, whuuut?).  I do love the different sized holes

Happy Friday!! Sorry for the radio silence on Wednesday.  I just flat out didn't have anything interesting to share.

By now you are well aware of how I'll be spending my weekend.  I met up with my sister yesterday to start decorating our dad's house for the party on Saturday but we ran out of steam so we will reconvene today.  I have all the costume prizes ready to go (go see my Instagram if you want to see what the winners will receive (along with an Amazon GC).  The guest list is mostly over 21 but we have a handful of kids that attend so I have prizes for each of them as well.  That has been fun to pull together.  We even have a few babies (6 months and younger) attending and I have special prizes for them too.

Haha!  I bought the Halloween banner on Sunday and decided to beglitter it.  It originally had different black and cream scrapbook paper for each letter.  Nice but I wanted it to sparkle.  I started with the first H and it wasn't until I was nine letters and a skull in before I realized the typo. 

No matter – I just swapped the letters.

I am really enjoying my Halloween/Fall decorations this year.  Oranges, rusts and browns really aren't my thing so I just go with the colors I like and throw in a skeleton or two and it all works.

I finally got the components to my Halloween costume.  I need to do some surgery on it but it should work out.  I hope to have pictures of the costume and festivities next Monday.  And that will be the last of the Halloween related blog posts.  You all have been kind to indulge me.

  • I am smitten with a new Etsy shop.  How sweet are these notebooks?  And this weekly planner that uses a similar layout to the one I'm currently drawing out by hand
  • This seems like a good price for a cast iron urn.  It is petite but wouldn't it look sweet with a small white pumpkin on top of it?  (I know I'm seriously rushing it and breaking my 'no season before its time' motto but how sweet is this little tree with the rain drop ornaments?)
  • Flickr user Klimbin has a gorgeous portfolio of colorized photographs.  I think these colorized Victorian and Edwardian photographs are so beautiful

We don't have plans to speak of but I HAVE to dial in my Halloween costume.  The party is next Saturday!!  I'm completely unprepared!  Other than a fabulous idea I don't have ANY of the components.  It's an ALL CAPS situation here!

The weather continues to be spectacular.  It has been in the low 80's and sunny all week.  It's sweater weather in the morning and t-shirt in the afternoon.  And the weather is supposed to hold out for the next week or so which means great weather for the Halloween party.  I can only think of one year where we had rain and had to move the party indoors.  

I hope you have a wonderful weekend and that you can enjoy the fall weather!
